The beauty of this dish is that is so simple and really only takes a few minutes to create. It is the perfect lunch salad and a great dish to have at dinner parties.
Ingredients
For the Salad:
- 1 chopped carrot
- 1 small chopped cucumber
- 1/2 steamed broccoli head, chopped
- Handful mint leaves
- Handful basil
- 1 cup spinach leaves
- 1 cup cabbage
- Handful raw almonds
- Topped with sliced avocado.
For the Dressing:
- 1/2 lemon, juiced
- 2 tbsp. apple cider vinegar
- 1 tsp. tahini
Method
- Place all ingredients in food processor.
- Chop!
- Add dressing ingredients to a small bowl and whisk with a fork until combined.
- Serve with protein of choice.
